Blueberry Muffins

用料  

Blueberry muffins的做法  

1. cream butter and sugar till light and fluffy

2. gradually add in whole egg and vanilla

3. add in half of sifted flour. Cont mixing with electric mixer

4. add in milk. Mix well with mixer

5. add in remaining sifted flour. Mix for about 15 seconds with electric mixer to develop gluten

6. reserve approx 20gm blueberries. Fold in the remaining into batter

7. 35gm each cup, makes 12. Top the muffins with reserved blueberries
